ABSTRACT
There was a time when being a vegetarian was considered radical or eccentric. By 2000, however, 7 percent of people living in the United States considered themselves vegetarians, and many other people were regularly including meatless fare in their diets. A poll conducted by the Vegetarian Resources Group in 1999 found that 5.5 percent of people eating out always ordered a dish without meat, fish, or fowl. An additional 57 percent said that they sometimes, often, or always ordered a vegetarian item when dining out.
