ABSTRACT
Haddock, a food fish found in shallow waters from Iceland south to France and to Cape Hatteras, North Carolina. It resembles the cod but is smaller, and has a black line along each side and a dark blotch above each of the two pectoral fins. Haddock usually weigh about 4 pounds (1.8 kg), although specimens weighing 15 pounds (6.8 kg) are sometimes caught. The flesh is firm and keeps well. Haddock may be preserved by a smoking process that also gives it a distinctive flavor. This product is called finnan haddie, after the fishing village of Findon (or Findhorn) in Scotland.
