The article discusses the highlights of a roundtable discussion among food service operators and suppliers held by the Food Alliance in 2009. Participants included Roberta Anderson, Josh Doff, Patty Erbach, Tom Grebb, Ray Thiering and Peter Truitt. They discussed the impact of the current economy on their ability to either operate as a sustainable resource or bring more local and sustainable products to their operation. They also addressed how operators and suppliers can work together to keep sustainability at the forefront of the foodservice industry.
