The article discusses the highlights of 62nd Annual National Conference of the School Nutrition Association in Philadelphia, Pennsylvania. At the conference, operators learned how to increase participation through merchandising. Martha Conklin, associate professor of hospitality management at Penn State University, and Vonda Fekete, chief, division of food and nutrition for the Pennsylvania Department of Education, said to increase participation, merchandising must appeal to all five senses.
