ABSTRACT
In this article the author reflects upon the trend of single- and dual-dish restaurants in 2012. He states that rising number of chain restaurants across the world are trimming down their menus and are offering limited range of cuisines and discusses the single-food strategy being adopted by new casual-dining restaurants. He opines that simpler menus are beneficial for restaurants as it reduces waste, requires lesser labour and ingredients.
