ABSTRACT
The author comments on the adoption of the principles of the green movement by companies operating in the foodservice industry of the U.S. He relates the increase in the rate of operators who are making green efforts in their institutions. He commends Bon Appétit Management Co. (BAMCO) for introducing environmental programs long before the green movement became trendy. He praises Eat'n Park Hospitality Group for fully adopting the local and sustainable movement.
