ABSTRACT
An interview with Michel Quissac, corporate chef of Servair is presented. Quissac states that Provence, France influences French cuisines offered in airlines. He states that his team in Servair works with Air France in the design of the interior of the A380. He argues that the requests of customers in inflight food service advances their creativity and ability to adapt in the different areas.
