ABSTRACT
The author offers insights on health issues in food service which were discussed during the American Society for Healthcare Food Service Administrators conference in Sarasota, Florida and the Culinary Conference held at the University of Massachusetts. He was struck by the disconnect between the message of Doctor Kenneth Cooper and the breakfast given to visitors at the conference in Florida. He was disappointed on the absence of skim milk in the breakfast offered to Culinary Conference visitors.
