ABSTRACT
The article emphasizes the need to support sustainability in the U.S. food service industry. To make sustainability truly viable, the government must channel real money into grants and loans to help local farmers enter the trade, expand their production or modify their wares, to make it worthwhile for farms to produce the amount of food noncommercial and restaurant operators are willing to buy.
