The researchers are interested in the study of different antioxidant properties and their impact on consumer health. It is noted that carotenoids play an important role in preventing cancer and cardio-vascular diseases. It has been shown that tomato lycopene is one of the most powerful natural antioxidant. The literature indicates that β-carotene and lycopene in combination enhances the absorption of lycopene. The aim of this study was to find out and choose a rapid and accurate quantitative and qualitative lycopene isomers and β-carotene analysis. It was found that HPLC using a reversed-phase C30 column is one of the best lycopene and its isomers, along with β-carotene analysis methods. In this study Waters chromatograph with a UV-Vis detector was used. After the experiment with the mobile phase trans lycopene isomers elution time shortened from 24 min to 14 min. In order to make the distribution of compounds, first of all it is necessary to know the chemical and physical properties. Knowledge of these properties allows for an easy and relatively simple chemical analysis, which is important for the development of new food additives and to enriched food with biologically active compounds.
