ABSTRACT
Recent years studies on the use of diacylglycerol oil in as edible oil has become focus of attention. Diacylglycerol oil has liquid character and contains about 80-81% of diglycerides. Diacylglycerol oil is very similar to triacylglycerol oil in terms of physicochemical properties. Besides, it has unique crystallization and plasticity characteristics features for the development of new products. Human studies and animal feeding experiments have shown that diacylglycerol oil is metabolized in a different pathway than that of triacylglycerol oil. Therefore, diacylglycerol oil has been reported to be effective on decreasing body fat mass, suppression of hypertriglyceridemia together with hypertension, controlling fluctuations of blood serum lipids and insulin in high risk-group individuals for cardiovascular problems.
