Confectionary Production;Jun2013, Vol. 79 Issue 4, p28
The article offers a discussion about forming and extrusion systems. The two groups of forming systems are pressure-less continuous slab forming and extrusion of continuous ropes of different shapes based on the nozzle design under pressure. A description of the forming process is presented. The three extrusion systems are single extrusion, co-extrusion and triple extrusion.
