ABSTRACT
The article discusses the use of liquorice as a natural food-flavoring ingredient. Some advantages of liquorice include quick dissolving properties, reduced levels of hygroscopicity and low percentage of residual humidity. The three aspects to be considered when using liquorice include flavor and taste, consistency and mouthfeel and coloring function. Example of confectionery products that use liquorice include hard pastilles and gums and jellies.
