ABSTRACT
In this article, Adam Chapman, head chef at the King's Head pub in Holt, Norfolk, England, presents his views on the changes made to the pub which proved beneficial. He tells that the real-ale offer at the pub was expanded while accommodation rooms and a steak restaurant were added as well that helped raise the pub's annual turnover to one million British pounds. He also points out the promotional schemes offered to the staff of the pub.
