ABSTRACT
THIS week I'll be eating… new season lamb. I'll be roasting a leg into which I've inserted slivers of garlic, on a bed of rosemary sprigs, with some red wine in the bottom of the roasting tin to help with the creation of a really good gravy. There will also be homemade mint sauce: lots of chopped mint moistened with a little boiling water, a little sugar, topped up with white wine or cider vinegar.
