ABSTRACT
THE best way to make a cheese sauce - which you could use in macaroni cheese, for example - is to start with a roux (flour cooked in butter, then blended with milk) and to melt in a strongly flavoured cheddar and maybe a little parmesan for extra punch. But you can really enhance the flavour of your sauce by adding a little dry English mustard powder (carefully).
