APROPOS the public's perception of him, mercurial chef Dylan McGrath says: 'They seem to think I've mellowed. But why have I mellowed? Because I don't have to get up at f****** five in the morning, chop mullet bones, then run around like a f****** headless chicken until lunch when 14 people come in and drive me f****** mental.'
