nt. This week I'll be eating� chicken with 40 cloves of garlic. Okay, the specific number is not important, but there should be lots. You just put the garlic in the bottom of a cast iron casserole, add a generous glug of olive oil and a glass of dry white wine. Pop a whole chicken on top, add salt and pepper, and put the lid on. Cook for a couple of hours until the meat is really tender, then serve with lots of crusty bread for mopping up the molten garlic and scrummy juices.
