k n THIS week I'll be eating� lemon curd. It seems the right season for it and we all need some autumnal comfort. Make sure you get unwaxed lemons - and if you can find some of the juicy, Amalfi ones (try Marks & Spencer), all the better. I use a double-boiler for this and start by melting 50g of butter. I then whisk two large eggs and stir it in with the juice and rind of two lemons and 100g of sugar. I stir until dissolved, turn up the heat a little and then keep stirring until the mixture thickens. Be careful not to overheat! Slowly and gently�.
