ABSTRACT
The article provides information on the Japanese distilled beverage called shochu. Shochu can begin as black sesame seeds, green tea, carrots, sweet potato, sugar cane, barley or rice. According to Jesse Alexander of EN Japanese Brasserie, shochu is a great compliment to food unlike most of its counterparts. The different kinds of shochu are also discussed including Beniotome, Iichiko and Kappa no sasoimizu.
