The article reports on the results of the 2011 Portability Study conducted by the publication. Compared to the 2010 study results, an increase in total respondents that offer portable food items is recorded. Although customers prefer portable food more due to convenience, they usually opt for items that are prepared to order like salads from the salad bar and deli sandwiches. Colleges and universities have taken the lead in the use of biodegradable food containers.
