ABSTRACT
The article focuses on the antimicrobial and antioxidant components of spices and herbs. Investigations suggest that spices and herbs are efficient inhibitors for the growth of yeast and foodborne bacteria. It points out that essential-oil extracts serve as beneficial complements to spices and herbs. However, the flavor profiled of herbs and spices can be intense and overwhelming for protein applications.
