The article shows how to cook bamboo shoots. It discusses how to determine the quality of bamboo shoots, and the importance of carefully digging shoots to ensure that the bottom of the shoot including its rhizome neck is intact. It details the cleaning and peeling of the shoots, and shows how to properly slice and dice them. Techniques to boil and freeze shoots are also discussed.
