ABSTRACT
The article focuses on Brent Craig, director of nutrition services at Douglas County School District in Castle Rock, Colorado, who has opened the lines of communication at Douglas County Schools to spread the changes that have been made to his reimbursable school meal program. According to him, he had to revise the menus and the way food was prepared to get student to purchase reimbursable meals, rather than buying à la carte items. It also talks about a Chefs Move to Schools program he has initiated.
