ABSTRACT
The article explores various dishes that foodservice operators make from chicken. The Khush Roti International Food Trailer foodservice operator at the University of North Texas in Denton offers international sandwiches, one of which is the Tiki Chiki Nanini chicken sandwich. It notes that operator Sodexo has added variety to its chicken dishes amid an increased focus on senior dining. Genesis Healthcare executive chef Charles Diffenderfer adds that they use crusting, baking and roasting methods when cooking chicken for older people.
