ABSTRACT
The article relates how executive chef Krysztof Sciuta used his Polish heritage in creating cold soups for his customers in West Virginia. Sciuta notes that he has used the zupa letnia cold soup recipe of his mother which he tends to serve to groups during special occasions. Other cold soups served by Sciuta include the gallaretta cold meat soup recipe of his father and some fruit soups. The importance of the freshness of ingredients is also emphasized by Sciuta.
