ABSTRACT
The article discusses the evolution of the tapas from being just a free bar snacks in Spain to become an international cuisine. The origin of the tapa is examined, in which one theory claimed that it originated in Andalusia, Spain where it was originally used to prevent flies from sipping on sherry glasses. Spanish gastronomy and wine expert Pablo Amate said that each region in Spain has its own tapas like the octopus tapas in Galicia, fresh seafood tapas in Barcelona and meat and sausage tapas in Madrid.
