ABSTRACT
The article presents the ideas submitted for the fourth annual Steal This Idea contest sponsored by Simplot at the 2011 MenuDirections conference of the magazine "FoodService Director" in New Orleans, Louisiana in 2011. Golden Living dining services manager Mickey Sellard won the contest. According to Nancy Levandowski of Iowa State University, they invite the kitchen staff at local schools to attend their culinary training. The University of New Hampshire offered afternoon tapas to address the afternoon dead period.
