ABSTRACT
This article highlights the growing popularity of using a variety of cheese in the U.S. Among those featured are the five-cheese Wisconsin artisan blend which has mozzarella, fontina, white cheddar, medium Asiago and Romano, the Gjetost which is a Norwegian goat cheese, and Gorgonzola. The article also discusses the many uses of cheese in different recipes such as Eggplant Parmesan, Vermont cheese soup, and roast beef and blue cheese sandwich.
