ABSTRACT
The article focuses on ice wine made from grapes harvested in Okanagan, British Columbia. It relates the early morning harvest of Riesling grapes at the vineyards of Walter Gehringer in southern Okanagan. Ice wine was first produced in 1794 in Franconia, Germany when an early frost left vintners with unharvested grapes. It describes how the pneumatic bladder press, a crushing machine used for commercial production of ice wine, works.
