ABSTRACT
The article discusses the use of nuts as a major ingredient by commercial and non-commercial foodservice operators in the U.S. Dishes with nuts at Ferris State University in Big Rapids, Michigan, include cashew chicken and banana bread with walnuts. Gourmet salads featuring nuts are created by Adam Strauss, the executive chef at Orange Regional Medical Center in Middletown, New York. The health benefits of nuts are described, as well as their suitability as a source of protein for vegetarians.
