The article discusses the use of the grab-and-go service at the foodservice departments of Gritman Medical Center in Moscow, Idaho and Anne Arundel Community College in Maryland. Gritman added a grab-and-go cooler called Courtyard Express in its cafeteria to satisfy the needs of evening-shift employees and people who prefer to take food home than cook. The number of grab-and-go outlets at Anne Arundel has been increased to eight in 2010. Foodservice administrators say they are able to offer more items that are cost-effective for them.
