ABSTRACT
The article features several U.S. food-service operators who have seen growth in their take-away business. The Dining Services at the Ohio University in Athens has created the Fast Lane service at its renovated Baker University Center. According to senior general manager Kent Scott, the grab-and-go option is part of their convenience store program. At the Providence Holy Cross Medical Center in Mission Hills, California, the Café Good to Go service was created when the facility's cafeteria has closed for renovation in mid-September 2010.
