ABSTRACT
The article discusses a new taquiera program at Biola University in La Mirada, California, headed by Bon Appétit Management Co. executive chef Pedro Alfaro. The goal of the program is to teach chefs to design menus and cook authentic Latino cuisine. One of the dishes that was taught in the program was salsa.
