The article discusses why vegetarian and vegan menu items are rapidly increasing in popularity in the U.S. market. According to a report by the School Nutrition Association, 98.8 percent of school districts are offering fresh fruits and vegetables in 2010 while 63.9 percent are serving vegetarian meals. Gwinnett County Public Schools in Suwanee, Georgia is offering a vegetarian line of menus to meet the demands of parents and students.
