ABSTRACT
The article discusses the strong demand for poultry in the U.S. as the economy is recovering from the recession. It also presents the views of poultry professionals including Andy Howard, Ray Martin and Michael Hartnell on the demand for turkey and chicken recipes in restaurants. According to Bill Lapp, commodity expert and founder of Advanced Economic Solutions in Omaha, Nebraska, chicken has become more popular as beef and pork prices continue to increase.
