In this article, the author talks about her 22-month-old adopted son, who suffered from severe food allergies, and couldn't eat eggs, dairy, and wheat flour. The author was worried how her son would have cake on his second birthday. One day, the author prepared cookies by combining oats, spelt flour, flaxseed, water, evaporated cane juice and olive oil. Her son had these oatmeal cookies on his birthday. Thereafter, the author developed over 60 allergy-sensitive recipes.
