ABSTRACT
The article discusses the emergence of Asian cookery in U.S. food service. With the proliferation of Asian ingredients, Asian cookery has entered mainstream offerings. The foodservice department at Orange County Public Schools in Orlando, Florida, partnered with Asian Food Solutions to offer Asian chicken meals, such as teriyaki chicken, spicy chicken and tangerine chicken. Mike Smith, executive chef at Restaurant Associates' café at The New York Times building, created a sushi station for 800 to 1,200 customers.
