ABSTRACT
The article reports on the renovation of a café at the University of Mary Washington (UMW) in Fredericksburg, Virginia. According to Monica Zimmer, director of public relations for Sodexo, the university was one of the first college campuses to receive the official Virginia Green Restaurant designation. Kori Dean, interim general manager of UMW Dining for Sodexo, most of the required initiatives have been implemented before they took notice of the certification.
