ABSTRACT
This article reports on the dining hall renovation project completed by Merrimack College in North Andover, Massachusetts that has resulted to restaurant-style seating and dining According to Sodexo's Varun Avasthi, the decision to emulate restaurants was the outcome of a foodservice survey. Particular focus is given to the changes made by the foodservice department in delivering food to students. Euro Kitchen and My Zone are two new concepts in the department.
