ABSTRACT
The article features Bill Whitcomb, Jr., director of catering for Andrews Catering, a division of Whitson's Culinary Group. He notes that people want more comfort foods and they have had a lot of success with s'mores such as brownie s'mores with thick fudge brownies and melted marshmallows. Whitcomb says that some businesses are down by 40-50% but their business has boomed in its off-premise catering division. He sees interest in local meats and organic produce, and an increase in requests for cruelty-free, free-range foods.
