ABSTRACT
The article discusses the nutritional value provided by chicken. Lenny Scranton, vice president of culinary operations for Morrison Management Specialists in Atlanta, Georgia, says people can diet but still get vitamins and protein from chicken. Entrées developed by Scranton using both chicken and turkey are mentioned. It is also noted that both Integris Heart Hospital in Oklahoma City and Mayo Clinic Hospital in Phoenix, Arizona are using airline chicken.
