ABSTRACT
The article offers information on old-fashioned sweeteners that are being used by bartenders for their cocktails. It relates how some bartenders are making their own simple syrup. Rich syrup refers to sugars like Demerara, turbinado or Muscovado which add deeper color, flavor and body to the syrup and the finished product. The gomme syrup or gum arabic is made from the sap of the acacia tree.
