The article offers information on Venezuelan cookery and dishes. It explains the role of geography in Venezuela's varied cuisine. Andres Branger, owner of Orinoco Kitchen, comments on the similarities of Venezuelan cookery with Cuban and Caribbean cookery. A description of Venezuelan dishes, Pabellon and Polvorosa de Pollo is provided. It relates the challenge of sourcing ingredients for authentic Venezuelan restaurants operating in the U.S.
