ABSTRACT
The article explains the importance of kitchen ventilation systems and discusses the factors to be considered in intalling them. It notes that a ventilation system involves the complex interaction of the kitchen with the other areas in a restaurant and may represent large equipment expenses. It discusses the cost of installing ventilation systems. Also described are the space-saving CG3 ventilation system from Gaylord Industries and M.A.R.VE.L. ventilation system from Halton.
