ABSTRACT
N, O-carboxymethyl chitosan oligosaccharides (NOA, NOB and NOC) with various degrees of substitution (DS) were prepared by the etherification of chitosan oligosaccharide and characterized by FTIR. Their antioxidant activities were evaluated by the scavenging O2, DPPH, H2O2 and determination of reducing power. The scavenging effects of NOA, NOB and NOC towards O2 and DPPH increased with the decreasing of DSs of -OH position. Moreover, the inhibiting efficacy in H2O2 system increased with the decreasing of DSs of -NH2 position whereas their reducing power increased with the increasing of the total DSs.
