ABSTRACT
The article presents a study which examines the occurrence of dental caries in laboratory rats whose diet contains lactalbumin or casein as the source of protein. The belief that diets containing casein will more effectively prevent the development of dental caries than diets containing lactalbumin is mentioned. It is noted that casein strongly adsorbs to dental enamel, protects enamel from acid dissolution, and liberates cariostatic phosphates through the action of plaque phosphoprotein phosphatase.
