This article focuses on Philippine cuisine. Authentic Filipino dishes with contemporary touches, as well as Pan-Asian selections, are offered at the New York City restaurant Cendrillon. Lennie DiCarlo, founder and chief executive officer of xroads Philippine Sea Salts, says it is a type of cuisine that has not been showcased yet in leading U.S. restaurants. There are certain ingredients used throughout the islands in spite of regional differences in Philippine cooking. Examples of Filipinos dishes offered at Cendrillon are provided.
