The article profiles Mark Bordeau, senior director of foodservices for the Broome Tioga Board of Cooperative Educational Services (BOCES) in Broome and Tioga counties in New York. Bordeau helps coordinate and manage foodservice programs for 10 of these districts. His quiet confidence and dedication are two reasons the BOCES' foodservice programs have been able to grow under Bordeau's leadership. BOCES' nutrition plan evolved into a program called Rock on Café.
