ABSTRACT
The article presents several food service ideas from U.S. food service directors. According to Sean Favreau, director of Dining Services at Aramark Brandeis University in Waltham, Massachusetts, they offer a "5 at 5" menu that offers five dishes that costs $5. Scott Myers, director of food and vending at University of North Carolina at Chapel Hill, started providing reusable take-out trays in addition to Styrofoam. Michael Bennett of Aramark Lake Forest College switched to trayless dining.
